1 can unpeeled apricot halves, thoroughly drained
1 egg
2/3 c milk
1 tbsp crisco, melted
1 c all-purpose flour
2 tbsp sugar
1 tsp baking powder
Crisco for deep frying
Confectioner's sugar
1/4 tsp salt
Dry apricots on paper towels until as dry as possible. Beat egg with milk; stiri n melted crisco. Combine flour, sugar, baking powder and salt; add egg mixture and stir until just mixed. Dip apricots in the batter. Fry a few at a time in deep Crisco heated to 365 degrees until fritters are brown, about 4 minutes, turning once. Drain on paper. Roll in confectioner's sugar; serve warm. Do not use frying basket.
