3 medum potatoes, peeled and grated
2 tbsp flour
2 beaten eggs
1 tsp salt
1 tsp milled black pepper
oil for frying
Topping
12 slices smoked salmon
half a cup cream cheese
dill to garnish
Making the latkes
1. Squeeze grated potatoes to remove excess water
2. Combine the flour, eggs and seasoning
3. Heat a non-stick frying pan to moderate heat
4. Add a little oil
5. Drop teaspoonfuls of the latke mixture into the pan
6. Fry on one side until set and lightly browned
7. Turn and cook for a further one and a half minutes on the other side
8. Remove and place on a paper towel
Making the topping
1. Halve the salmon slices and arrange on the latkes
2. Top with each with a little cream cheese
3. Garnish with dill
